70% Trebbiano Vecchio and 30% Sangiovese Vecchio .
Only the best bunches are selected and dried until December/January in suitable environments. After this time they are crushed and the must (very sugary) left to mature in small caratelli for at least 5 years. This wine is the result of constant commitment and patient dedication in every single phase, for this reason it is produced only in particular vintages.
COLOR: Very deep amber.
BOUQUET: Intensely scented with oxidative aromas reminiscent of dried fruit and dried fruit combined with notes of chocolate, honey, caramel and a light enamel finish.
TASTE: Moderately sweet and sapid, harmonious, full, long and very soft. The sip is enhanced by a good taste freshness.
GRADATION : 16.5%
I recommend pairing this wine with desserts, pastries or with excellent dark chocolate. I suggest trying it also as a pairing with savory dishes such as blue cheeses or meat paté, I assure you it will amaze. This type of wine can also be left open for years (in the fridge or at room temperature) while maintaining the same characteristics, thanks to the action of the oxygen with which it comes into contact at the time of vinification. I recommend serving it slightly cooled 14°-16° C, especially if you want to pair it with savory dishes, but it is also excellent at room temperature as a small glass at the end of a meal or for meditation with a good cigar.
