ORGANIC extra virgin olive oil
The “Castelvecchio” Extra Virgin Olive Oil comes from specialized olive groves located on the hills of San Pancrazio in the municipality of San Casciano Val di Pesa at an altitude of 250 meters with south-east exposure. It is still obtained with the traditional method in which the olives of different varieties: moraiolo, frantoio, leccino and pendolino, are completely hand-picked directly from the plant and brought to the mill within 24 hours. The pressing takes place strictly cold, only this system allows to produce an oil with very low acidity and a decidedly unmistakable taste. Our oil is subjected to natural filtration, any deposits are due to its natural settling.
Olive surface: 14 Ha/olive trees: 3500.
We recommend keeping the product in a cool place, away from light and sources of heat.
It has a beautiful bright green color, on the nose we can find the scent of cut grass and artichoke. The taste is intense with a slight tingling on the tongue, typical of Tuscan oils, and then returns of green notes. It can be used to season all your preparations raw.
